Roasted Kielbasa & Potatoes

Easy weeknight dinners are sometimes hard to come up with – so finding something that i steady fast, and thaws quickly – is important.  Kielbasa is a great option because it thaws in the microwave quickly and truly only requires warming.  Roasting or frying to get a crispy crust on  your Kielbasa makes it better.

Adding cabbage allows you to cut back on Potato – which can help you cut calories nicely.  Use turkey kielbasa in this one for a lighter meal!

Roasted Kielbasa & Potatoes

It's amazing how easy some recipes can be to changeup and make them healthier and still taste good. Since going on a major campaign to loose some weight a la Weight Watchers I've managed to find some pretty interesting ways to modify recipes. Try this one my DH just loves it.

Cook Time 40 minutes

Ingredients

  • 3 or 4 medium size red potatoes washed and cut into chunks
  • 1 pkg kielbasa cut into bite size chunks
  • 1/2 head cabbage cut up coarsely (I just cut it in strips to look like noodles)
  • 2 or 3 Tbsp of olive oil
  • 1 pkg dry onion soup mix

Instructions

  1. Preheat oven to 400 degrees
  2. Lightly coat a 9x13 pan with spray oil
  3. Microwave cabbage 2 or 3 min to cook just slightly
  4. Layer potatoes, kielbasa, and cabbage in the pan and drizzle with olive oil
  5. Toss to coat
  6. Sprinkle onion soup mix over the top
  7. Cover with foil
  8. Bake about 20 minutes
  9. Remove foil and stir
  10. Bake 20 more minutes or until potatoes are done
