Fast and Yummy Vegetarian Chik’n Parmesan Sandwich

Yeah, you read that right – vegetarian chicken.  Here’s the deal – I love the Boca Chicken and Spicy Chicken patties.  They’re great for a quick lunch or dinner and lower in calories than one of those processed weird parts of the chicken breaded patties.  This is a pic of the kind I like to get – the Spicy ones are phenomenal as well if you like a bit of a kick!

I put this sandwich together today – the first day of summer vacation – for my Son and I for lunch.  Really fast, tasty and filling – and used up some odds and ends from the fridge.  I had a few slices of fresh Mozzarella – about 1/4 C of leftover marinara sauce and some french bread laying around.

Fast and Yummy Vegetarian Chik’n Parmesan Sandwich

Ingredients

  • 4 thin slices french bread or whatever bread you have
  • 2 Boca Original Chik'n Patty
  • 2 slices fresh Mozzarella or whatever cheese you like
  • 1/4 C Marinara Sauce

Instructions

  1. Thaw the chicken patties in the microwave for about 1 minute - then put them in a hot skillet to crisp up on both sides
  2. When the chicken is almost done, drop the bread into the toaster
  3. Heat the marinara sauce
  4. When the toast is done - pull it from the toaster and butter and sprinkle on a little garlic salt or rub with a clove of garlic
  5. Layer a chicken patty, a big spoon full of marinara sauce, a slice of mozzarella and the other piece of toast on. You can heat this in the microwave for a few minutes to help the cheese melt.
  6. Dip the sandwich in the leftover marinara sauce!
