This week is a bit hectic – I’m busy at work, Todd’s busy at work, Aerik has Boyscouts and baseball, and Maddie is 17…….oy. Dinner will be fast for the most part – here’s what we have planned: Sunday – BBQ Ribs and Potato Salad Monday – Chicken Parmesan (We made this meatless and used […]
Recipes
I love recipes. I have a cookbook addiction and I probably get 6-7 cooking magazines every month. I love food, and I love great recipes. Here you’ll find some great options to put a quick meal on the table, or a great recipe for Sunday dinner or entertaining. I live in a fairly rural area, and our grocery stores don’t promote gourmand tastes. Simple ingredients, great and easy techniques, lead to fabulous meals. Give them a try and please feel free to leave a comment!
Weekly Menu – Week of May 12
I have been really remiss about documenting my weekly menus here – and that makes me angry because it’s areally a valuable resource to look back at as I’m planning future menus. Crockpot Shredded Chicken
I’m a big fan of shortcuts. I cook extra and freeze, or throw a big package of chicken breasts in the crockpot and cook them until they shred. Freeze this crockpot shredded chicken and you can pull out portions for burritos, soup, quesadillas, skillet meals – pretty much anything that you need chicken for. I’m […]
Chuckwagon Sandwiches (Cowboy Sloppy Joes)
My husband is a HUGE fan of this sandwich. My kids are less than tolerant because of the beans – but if your family loves beans – then this one is a home run. The best part is the 1/2 lb of hamburger – that means 2 meals from 1lb of hamburger. You could use […]
