I have – over the years – had a love-dislike relationship with Elk and Venison from Colorado. It’s not the corn/grain fed venison of my youth in Minnesota, which I always thought was beef. My husband and son are both hunters, and last year we had TWO elk harvested within a week or so of […]
Recipes
I love recipes. I have a cookbook addiction and I probably get 6-7 cooking magazines every month. I love food, and I love great recipes. Here you’ll find some great options to put a quick meal on the table, or a great recipe for Sunday dinner or entertaining. I live in a fairly rural area, and our grocery stores don’t promote gourmand tastes. Simple ingredients, great and easy techniques, lead to fabulous meals. Give them a try and please feel free to leave a comment!
Creamy Spinach, Cheese & Chipotle Enchiladas
I started with a recipe from TwoPeasandtheirpod.com – but didn’t have a can of green chiles that was needed, so I improvised and ended up with something that was pretty awesome. If you want to up the protein quotient – add in some black beans or diced chicken – but I like the vegetarian option […]
Fast & Easy Chicken Enchilada Soup
Todd really likes the chicken enchilada soup from Chilis. I’ve never attempted it, not sure why. This recipe came up in my Pinterest feed and I thought it would be a fast soup to have with grilled cheese on a cooler night. I was supposed to make it Sunday night – but we went and […]
Zoodle Caprese Salad
I. Love. Caprese. Salad – but making it for a crowd can be a bit of a pain – and expensive if you want really good tomatoes & mozzarella. This salad combines a new technique – zoodles – with a classic salad. I don’t have a spiralizer, so I use a julienne peeler on the […]
Leftover Shepherd’s Pie
Have some leftover meat (chicken, pork, or beef – I’m flexible)? Maybe you have a bunch of veggies you need to cook up. Either way – consider a filling and flexible Shepherd’s Pie for dinner. I love this recipe, I’ve made it with turkey, chicken, ground beef, leftover roast, leftover prime rib, ham, leftover pork […]
One More Reason to Have Chicken Stock in Your Freezer
I LOVE having chicken stock in my freezer – not only for recipes – but for quick soups as well. I generally freeze some of my stock with pieces of roasted chicken left in it so I can make soup in a jiffy. Literally – this isn’t a recipe – thaw soup & chicken – […]
