I was running late tonight. I was writing and had the “what am I going to do about dinner” thing nagging me in the back of my head. My plan was to make lasagna….but the need to write was stronger than the need to cook – so lasagna will have to wait.
I was thinking of doing tacos – when I realized I had the stuff for tacos, tostadas, and quesadillas – so why not make a mash up of all three? Thus, the Quesadilla Tostada was born.
Quesadilla Tostadas – A Dinner Invention

Cook Time 15 minutes
Total Time 25 minutes

Ingredients
- 1 lb Ground Beef
- 1 Packet Taco Seasoning
- 2 Cups Shredded Cheddar Cheese
- 8 large tortillas
- *Your Favorite Taco Toppings
- Lettuce
- tomato
- onion
- sour cream
- jalapenos
Instructions

Brown your hamburger until well done and then drain.

Add in taco seasoning and water, cook according to the package until thickened

In a large skillet, place a tortilla and 1/4 of the hamburger mixture

Cover with 1/2 Cup Cheese and the 2nd Tortilla

Toast on both sides until the tortilla is crisp

Cut into quarters and serve with your favorite taco toppings
