This week we’re pretty busy. Grandpa will be here Tuesday night and is staying through all of my scheduled trips to help out with the kids. I’m headed to NYC October 1-4 and then Vegas October 14-18…crazy travel schedule but I think that’s all I’ll have until the end of the year. Menu this week will be short and sweet, we’re headed to the family cabin in Buena Vista for a few days at the end of the week (I think.) I’m not sure what we’ll eat there, its usually pretty simple fare and I don’t normally cook ahead.
Monday – Spaghetti. Probably just pedestrian with hamburger and jarred sauce. My favorite pasta sauce is Newman’s Own Marinara. I have literally tried EVERY sauce known to mankind and this is the one I fall back on when I’m in a rush.
Tuesday – Enchilada Casserole. Layers of seasoned ground beef, beans, Not-So-Spanish Rice, cheese and flour tortillas. I pour enchilada sauce over the top and sprinkle with cheese. This bakes for about 45 minutes at 350 degrees – it’s fabulous!
Wednesday – White Bean & Chicken Chili. I havent made this before, we’ll see how it goes over. I can tell you my kids hate beans…so it probably wont be very popular with them. I’m wondering if chili without tomato sauce will lessen my hubby’s heartburn. I’ll let you know the results of my experiment.
Thursday – Patty Melts. I haven’t tried making these at home for a long while, we’ll see how it goes. with grilled onions for Todd, Gpa and I – no onions for the kids!
Friday – Sunday – at the cabin, we’ll see what we come up with for eats up there. I might do some make ahead cooking and share it here in a new post.
