Fast & Tasty BBQ Chicken Pizza

This is one of those recipes that’s not really a “recipe” – It’s so simple but so tasty! I love these fast meals in the summer that can be 100% done on the grill, because between baseball, softball, boy scouts and jobs – there’s not a lot of time for dinner!

Change things up with your favorites – you could use ground pork and hoisin sauce for an asian flair, or maybe taco seasoning on shredded chicken and taco toppings for a taco pizza!

Fast & Tasty BBQ Chicken Pizza

Ingredients

  • 2 Thin Pizza Crusts Ready to use (I like the Stonefire brand, but whatever you can get is great)
  • 2 Chicken Breasts boneless skinless are fast
  • 1 Cup BBQ Sauce use your favorite
  • 1/4 red onion sliced thin
  • 1/2 Cup shredded cheese cheddar or your favorite

Instructions

  1. Butterfly chicken breasts and put them out on the grill. Butterflying them means slicing them in half horizontally so they cook faster
  2. When chicken breasts are done, remove from grill and place your pizza crusts on the grill - this will heat and crisp them up a bit - turn the heat WAYYY down or put them on a top rack
  3. Dice chicken breasts fairly small so they dont require super human bites
  4. Pull crusts from grill and spread liberally with your favorite BBQ sauce, I use about 1/2 to 3/4 cup on the base
  5. Sprinkle on your grilled chicken and onions
  6. Drizzle on the remainder of the BBQ Sauce & sprinkle on the cheese
  7. Put back on the grill for about 10 minutes until the crust is crunchy and the cheese is melted
  8. Enjoy!
