Ingredients
Chicken
4Chicken Breasts - butterflied open if you like and they're thick/fat ones
4ClovesGarlicminced
1TbspOlive Oil
1/4tsp.Salt
1/4tspPepper
1Limejuiced
Mango Salsa
2Ripe Mangopeeled & diced
2-3small ripe tomatoesromas are fine, diced
1/4CRed Oniondiced
1/2 to 1Fresh Jalapenoseeded & minced
1/2yellow or orange pepperdiced
2TbspCilantro or Parsleyminced
1/2tspSalt
1/4tspPepper
Instructions
Marinate the chicken in the garlic, oil, lime, salt & pepper for at least 2 hours, overnight is better.
Grill over charcoal or propane until 165-170 degrees internal temperature
Make the salsa ahead of time.
Combine all salsa ingredients in a bowl and refrigerate. Taste and adjust salt, pepper & Jalapeno. As it sites it will get hotter - so maybe adjust that AFTER it sits.
