Honey Sweetened Cinnamon Scones

Ingredients

  • 1 cup All Purpose Flour
  • 1 cup White Whole Wheat Flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup butter 1 Stick - COLD - and cut into cubes
  • 1 egg separated
  • 3 Tablespoons honey
  • 1/3 cup low-fat buttermilk
  • Cinnamon Sugar for Sprinkling
  • *Glaze
  • 1/2 Cup Powdered Sugar
  • 1/2 tsp Vanilla
  • 1-2 Tbsp Milk
  • Dash of Cinnamon

Instructions

  1. Preheat oven to 400 degrees
  2. In the bowl of your food processor, add the flour, baking powder, baking soda and salt. Buzz just for a second to combine.
  3. Add in the cold butter and pulse until the butter is cut into the flour - will look a bit pebbly but not too much
  4. In a separate bowl combine the buttermilk, honey and egg yolk, whisk to break up the egg and mix in the honey. I heat my honey just a tiny bit so its easier to measure and mix in.
  5. Pulse and pour the liquid in at the same time.
  6. Continue to pulse until the dough creates a ball
  7. Turn out onto floured surface and pat into a circle gently - do not knead!
  8. Cut into 8 wedges (or more if you want to make baby scones)
  9. Place on dark, greased cookie sheet
  10. Whisk the egg white until frothy - paint on top of the scones and sprinkle with cinnamon sugar
  11. Bake at 400 degrees for 12 minutes
  12. While they bake make the glaze.
  13. Remove to parchment and drizzle with glaze
  14. Sprinkle on more cinnamon sugar and let cool until the glaze is set.
