Coca Cola Braised Pork Rib Tips

Ingredients

  • 4-5 lbs Pork Rib Tips
  • 1 Tbsp. Kosher Salt
  • 1 Tbsp Fresh Ground Pepper
  • 1/4 C. Flour
  • 1 C Coca Cola
  • 2 Cups Beef Broth or Stock
  • 2 Tbsp Olive Oil
  • 1/2 Onion Sliced
  • 2 Medium Carrots Diced
  • 1 C.Crushed Tomato
  • 1 Tbsp Tomato Paste
  • 1 tsp Ground Black Pepper
  • 2 Bay Leaves
  • 1 Tbsp Thyme
  • 2 Tbsp Butter

Instructions

  1. Preheat the Oven to 375 degrees.
  2. In a baggie or paper bag combine the salt pepper and flour and shake well
  3. Toss in the Rib Tips and coat well
  4. Heat 2 Tbsp of Olive Oil in your dutch oven and brown the rib tips on all sides. You'll have to do this in batches so have a place to set them aside.
  5. When all of the ribs are browned and set aside, add onions, carrots and garlic to the dutch oven and saute until the onions start browning
  6. Add in the Cola, stock, tomatoes, tomato paste, black pepper, thyme, and bay leaves to the stock pot and bring to a simmer
  7. Add back in ribs and cover tightly. When the pot is simmering place in the oven for 2 hours.
  8. Serve with baked or mashed potatoes and enjoy!
