Pennsylvania Dutch Apple Cake Recipe

Ingredients

  • 1/2 C. Shortening
  • 2 C. Sugar
  • 2 Eggs
  • 2 tsp Vanilla
  • 2 C All Purpose Flour
  • 2 tsp. baking soda
  • 1 1/2 tsp nutmeg
  • 1 1/2 tsp cinnamon
  • 1 tsp salt
  • 2 T Hot Water NO MORE
  • 5 C Apples peeled & cut into 1" cubes
  • 1 C Dark Raisins or not, maybe some other dried fruit?
  • 1 C Chopped Walnuts

Instructions

  1. Cream together shortening and sugar, then beat in eggs and vanilla
  2. Sift dry ingredients into egg mixture, stir in 2 Tbsp water, then blend well, but don't over-stir.
  3. DO NOT ADD ANY EXTRA WATER
  4. Fold in raisins, nuts and apples until well distributed
  5. Spray and flour a 13x9 pan
  6. Spread batter evenly with the back of a wet spoon, it will be quite thick
  7. Bake in a 350 degree oven for 60-70 minutes & test for doneness with a toothpick, when toothpick is removed from center of cake and it is clean, the cake is done
  8. Remove from oven and let cool, serve with ice cream or whipped cream.
