Grilled Lemon Yogurt Chicken Gyros

Ingredients

  • 4 large chicken breasts
  • Marinade:
  • 1 1/2 Cups Greek Yogurt
  • 2 Tbsp Lemon Juice
  • 2 Sprigs Rosemary
  • 5 Cloves Garlic minced
  • 1 tsp pepper
  • 1 1/2 tsp salt
  • Cucumber Sauce:
  • 3/4 cup of peeled finely diced cucumber
  • 1/2 teaspoon of salt
  • 1/4 cup plain Greek-style yogurt
  • 3 tablespoons sour cream
  • 2 Tbsp lemon juice
  • salt and pepper
  • Gryos - Pile this all on
  • Warmed Naan
  • Sliced Grilled Chicken
  • Lettuce
  • Tomato Wedges
  • Cucumber Sauce

Instructions

  1. Mix all of the marinade ingredients together in a zip bag and pile in the chicken breasts and smush them around well. Set in fridge to marinade for at least 30 minutes, 2-3 hrs is better.
  2. Combine all of the Cucumber Sauce ingredients in a small bowl and cover tightly and slide back into the refrigerator.
  3. Grill the chicken until done on medium, 180 deg internal temperature - slice into manageable pieces.
  4. Pile chicken on a warm piece of Naan, add the veggies and sauce & enjoy.
