Spicy Chicken Salad – Quick and Healthy

This recipe will make enough for 2 really generous sandwiches.....or many tea sandwiches.

Ingredients

  • 1 4 oz can chicken breast
  • 1 Tbsp finely diced onion
  • 2 Tbsp finely diced celery
  • 2 Tbsp Miracle Whip or mayo if you prefer
  • 1 tsp. Sriracha hot sauce more if you like more spicy
  • dash salt
  • dash pepper

Instructions

  1. Combine all ingredients in a bowl and mix well
  2. Serve on whole wheat bread or a croissant if you want fancy. You can get super fancy and serve on white bread with the crust removed as a tea sandwich.
  3. I also like this served in a lettuce cup to reduce carbs
