Crockpot Shredded Chicken

I’m a big fan of shortcuts.  I cook extra and freeze, or throw a big package of chicken breasts in the crockpot and cook them until they shred.  Freeze this crockpot shredded chicken and you can pull out portions for burritos, soup, quesadillas, skillet meals – pretty much anything that you need chicken for.

I’m a tad embarassed to call this a recipe – but it really is a  base for a lot of other recipes I’ll be sharing soon – so we’ll start with this.

Crockpot Shredded Chicken

Ingredients

  • 6 to 8 Chicken Breasts - can be frozen
  • 1 Cup Water
  • 1 Crockpot Liner
  • Salt
  • Pepper

Instructions

  1. In your crockpot, pour in 1/2 c of water and THEN place the crockpot liner in the crockpot
  2. Pour the rest of the water into the crockpot liner
  3. Salt and pepper both sides of the chicken and place in the crockpot (can still be frozen)
  4. Cook on medium 6 hours (if frozen - low for 4-6 if thawed)
  5. Let cool and shred - portion in 1 cup portions and freeze.
