Easy Italian Mozzarella Chicken Recipe

I’m always looking for ways to eat chicken that are a) tasty; b) healthful; and c) not grilled chicken breast.  To be honest, chicken breast is probably my least favorite cut – I’m a thigh girl.  But sometimes they’re on sale – or that’s what you have – so here’s a great recipe to transform a dry, boring chicken breast into a yummy dinner.

This is a fairly healthy recipe – using Wheaties or bran cereal like AllBran creates a crisp coating that is complimented with some spices – yum!

Fried Chicken Parm

Fast, easy and tasty – this chicken parm recipe is quick and easy.  Pounding the chicken thin helps it cook faster so you can have a great meal on the table in no time!

Ingredients

  • ½ C. Bread Crumbs
  • 1 Tsp. Italian Seasoning
  • ¼ Tsp. Salt
  • ¼ Tsp. Garlic powder
  • ¼ Tsp. Onion powder
  • 1 Can Italian Tomato Sauce
  • 2 Eggs (beaten)
  • ½ to ¾ C. Parmesan cheese
  • 2 4-Oz boneless skinless chicken breast cutlets
  • 2 or 3 Tbsp. Olive oil for skillet

Instructions

  1. In a bowl mix bread crumbs, Italian seasoning, salt, garlic powder, and onion powder, mix together well.
  2. Place chicken breasts one at a time between 2 sheets of plastic wrap and pound to ½ inch thickness.
  3. Dip chicken in egg and then in bread crumb mixture, in a heated skillet with olive oil and cook for 4 minutes on each side. Evenly spread Italian tomato Sauce over each piece of chicken and then cover with Parmesan cheese. Cover and cook until done (165 degrees).
  4. Serve with Cheesy Mashies (this web site), and salad.

Easy Potato Salad

This easy potato salad recipe was given to me by a very good friend and retired dairy farmer. She always had to cook for a crowd during harvest time. My church now uses this recipe as a “go to” recipe when we have large gatherings. It makes a huge batch but you can cut it in half for smaller groups or families. You can also use lite salad dressing and it doesn’t seem to harm the taste. I hope you will try it the next time you go to a BBQ or large gathering. I have tossed my own old family recipe in favor of this. It just plain tastes better!

Easy Potato Salad

Ingredients

  • 10 lbs, cooked, peeled, and diced potatoes
  • 1 Doz. hard boiled eggs, diced
  • Dill pickles to taste, diced
  • 1 Qt. salad dressing (like Miracle Whip)
  • Small amount of pickle juice to help with dryness
  • Morton's Natures Seasoning salt, add too taste. (Takes the place of salt & pepper)

Instructions

  1. Mix all together in a large bowl. This will feed approximately 50 people.

Tiramisu Iced Coffee

Great low-cal way to cool off and have something sweet in the evening.  If you’re caffeine sensitive – be sure you use decaf instant coffee!

Tiramisu Iced Coffee

TIP: Make the mixture ahead so that you just add the milk, vanilla and ice to 3 Tbsps of powder mixture!

In an air tight container mix: ½ C. creamer ½ C. coffee granules ½ C. sweetener ¼ C. cocoa powder

Ingredients

  • Ingredients:
  • 1 Tbsp. Fat free vanilla flavored non dairy powdered creamer
  • 2 Tsp. Instant coffee granules
  • 2 Tsp. No calorie sweetner or 2 packets
  • 1 ¼ Tsp. Unsweetened cocoa powder
  • ½ C. fat free milk
  • ¼ Tsp. Vanilla
  • 1 ½ C. crushed ice or 8 to 12 cubes
  • Fat free Readi-wip

Instructions

  1. In a tall glass, combine creamer, coffee granules, sweetener, and cocoa in a blender, add milk and whir it up a little to dissolve the creamer & coffee mixture. Add the ice and whir it up until it is thick and no more chunks of ice are left. Pour into a tall glass and add a swirl of fat free whipped topping.

Roasted Kielbasa & Potatoes

Easy weeknight dinners are sometimes hard to come up with – so finding something that i steady fast, and thaws quickly – is important.  Kielbasa is a great option because it thaws in the microwave quickly and truly only requires warming.  Roasting or frying to get a crispy crust on  your Kielbasa makes it better.

Adding cabbage allows you to cut back on Potato – which can help you cut calories nicely.  Use turkey kielbasa in this one for a lighter meal!

Roasted Kielbasa & Potatoes

It's amazing how easy some recipes can be to changeup and make them healthier and still taste good. Since going on a major campaign to loose some weight a la Weight Watchers I've managed to find some pretty interesting ways to modify recipes. Try this one my DH just loves it.

Ingredients

  • 3 or 4 medium size red potatoes washed and cut into chunks
  • 1 pkg kielbasa, cut into bite size chunks
  • 1/2 head cabbage, cut up coarsely (I just cut it in strips to look like noodles)
  • 2 or 3 Tbsp of olive oil
  • 1 pkg dry onion soup mix

Instructions

  1. Preheat oven to 400 degrees
  2. Lightly coat a 9x13 pan with spray oil
  3. Microwave cabbage 2 or 3 min to cook just slightly
  4. Layer potatoes, kielbasa, and cabbage in the pan and drizzle with olive oil
  5. Toss to coat
  6. Sprinkle onion soup mix over the top
  7. Cover with foil
  8. Bake about 20 minutes
  9. Remove foil and stir
  10. Bake 20 more minutes or until potatoes are done

Clean Your Blinds the Easy Way!!!

(First I must caution you I have never tried using this method on cellular blinds, only the plastic or wood louvered blinds.)

I hate the tedious wiping back and forth to clean blinds and sometimes that’s just not good enough to get all the crud off. If you’ve ever moved into a home or apartment that the blinds were so dirty you were sure critters were lurking in them try this simple method.

Fill the bathtub with some hot soapy water, use Dawn, Joy, or for wood I might use Murphy’s oil soap. Take a blind down and drop it gently in the tub one at a time. Let it soak while you take a rag and whip down the window area and around the top part that doesn’t come down. (Clean the window with Marge’s Magic Elixir from this blog while the blind is soaking.)

Next go back to the tub and with the same rag just slosh the rag over the louvers, swishing the blind back and forth a little too. Gather it up and stand it on end in the tub to shake off most of the water, then lay it on some bath towels and gently wipe most of the water off, just so it isn’t dripping. Then hang the blind back up, dropping it down all the way to dry.

Voila! A clean blind and window all at once.
